Ingredients

  • 1 oz. 30 mL MONIN Yuzu Purée
  • 1/2 oz. 15 mL MONIN Elderflower Syrup
  • 1 oz. 30 mL fresh lime juice
  • Top with 4 oz. 120 mL soda water
  • ice

Method

    Pour the purée, syrup, and lime juice into an ice-filled serving glass in the order listed.

    Transfer into a mixing tin and back into the serving glass.

    Top with soda water and stir once, gently.

    Garnish and serve.

Glass size: 12 oz.
Garnish: Lime wheel and a cucumber ribbon
This is the citrus serve, and the one to lead with. It is the least sweet of the three and the easiest to repeat under pressure.

Berry serve

- 1 oz. 30 mL MONIN Passion Fruit Syrup - 1 oz. 30 mL MONIN Peach Purée - 2 oz. 60 mL pineapple juice - Shake with ice and pour unstrained into the serving glass. - Glass: Tall, 14 oz. Garnish: dried pineapple.

Running the three together

- Six products cover all three drinks, and four of them are shelf stable. - One shaker and one mixing tin is the whole station. Nothing here needs a blender. - Squeeze the lime and lemon in the morning only. Juice held longer than a day reads dull by evening service. - If the menu needs a fourth, make it a zero-sugar option rather than another flavor: MONIN Pure Caramel or MONIN Pure Jasmine over soda.
